Gluten is the protein in 3 grains:  wheat, rye & barley.  Gluten sensitivity may affect up to 40% of the population and often presents with symptoms outside the gastrointestinal tract.  Understanding how to make the diagnosis of gluten sensitivity and how to approach treatment is not well understood by conventional medicine.
